Spicy Tapas Meatballs (Albondigas)
Albondigas, are traditionally served at tapas bars in Spain. If I ever open another restaurant, this would be my signature dish. Sensational, yet unpretentious. Whether you serve them for an appetizer, tapas party, or dinner main dish, these small meatballs in a spicy, flavourful tomato sauce are perfect for enjoying with a glass of Spanish red wine.
Why go to all the effort only to turn out dull, tough meatballs? This version is a variation of the Spanish tradition. The sauce is rich and delicious, but the meatball is light and soft in your mouth. This is a great dish for entertaining or for a cosy night in.
I used to always get the kids involved to help me roll the meatballs, but I have now introduced a few tricks so now I can also knock out a big batch on my own in no time.
